Sherry

Sherry is one of the world’s most distinctive and historic fortified wines, produced in the Jerez region of Andalusia in southern Spain. The area’s warm Mediterranean climate, chalky albariza soils and Atlantic influences provide the foundations for a remarkable range of wines, from bone-dry and delicate to rich and intensely sweet.

Palomino is the principal grape for dry Sherry, while Pedro Ximénez and Moscatel are used for sweeter styles. Sherry’s unique character comes from traditional ageing systems, including the solera y criaderas system, and, for styles such as Fino and Manzanilla, biological ageing under a layer of yeast known as flor. Despite its centuries-old heritage, the industry continues to evolve, with producers exploring fresher styles, premium bottlings and renewed interest in Sherry’s diverse regional and traditional expressions.
